Crepe Cake

Happy Sunday! This takes a little bit of time to put together but its really just time spent flipping crepes. If you can get a couple people working on different elements (or grills like I use) then you will fly through and have this delicious breakfast on the table in no time

Cream Layered Crepe Cake

Crepes:
4 eggs
1/2 c butter, melted
1/3 c sugar
1 c flour
1 c milk
1/4 c water
1 tsp. vanilla
dash of salt
In a blender place all ingredients, except flour.  Blend.  Sprinkle in flour, blend until incorporated.  Refrigerate for at least one hour.  Remove from refrigerator and blend for about a minute.  Heat non-stick skillet or grill and butter (about a 1/2 tsp).

Cream Filled Crepe Cake

Stagger the size of your crepes and as they finish, layer on parchment paper until you are ready to put the cake together.

Cream filling:

5 tbsp of non fat plain greek yogurt, mixed with 2 tbsp of softened cream cheese.

Starting with your largest crepes, layer on a plate with cream filling, gradually working to the smaller crepes.

Optional toppings: strawberry jam on top of cream filling, syrup or confectioners sugar
