Spicy Mango Stirfry

I would like to introduce you to a good friend of mine, it is known by many different names, and depending on the day can be hot and spicy, or warm and cozy. Of course I am talking about stir fry! We easily eat some variation of it 3-5 times a week. I tend not to post about this go to meal because its not always beautiful to photograph, and I never follow any sort of a recipe. Despite the casualness of this recipe (if you can call it that), I think that this is such a great meal to throw together on a week night that I want to share my favourite version of it

Ingredients:

1/2 cup quinoa

1 cup water

1 package of stir fry steak strips

1 handful of walnuts

1 red pepper

1 orange pepper

2 tablespoons mango chutney

2 tablespoons non fat plain greek yogurt

1 tablespoons hot curry powder

1 tablespoon sesame oil

1 tablespoon chili flakes

Variations:

Steak or chicken strips

Quinoa, couscous, rice, or noodles

Vegetables: broccoli, peppers, onions, celery, carrots, peas, zuchini, asparagus, mushrooms

Extras: walnuts, almonds, coconut shreds, toasted chickpeas

Sauces: Teriyaki, black bean, oyster, general tao, or any other sauce of your choice

Directions:

Bring quinoa and water to a boil over medium heat, reduce to low, cover, and simmer for approx. 15 minutes

Add diced onion and chili flakes to sesame oil in wok or large non stick frying pan over medium-high heat

Grill onions until soft and brown, add steak strips

Cook over medium-high heat for approx 10 minutes, or until steak strips are cooked through

Add any vegetables or extras to the wok and continue to grill for 5 minutes

Once the quinoa is done and fluffy toss with greek yogurt, mango chutney, and curry powder

Serve meat and vegetables over quinoa and enjoy!
