Ladies and gentlemen, we have a miracle here-I made a salad for CWM that he LOVED! To quote him “this is the best meal I have ever had” (just don’t tell his Mom or Grandma that). Any meal I can make in this heat without turning the oven on is considered a success in my books, but this takes success to a whole new level.  This salad is a great balance of hearty and light and the best part is that you can tweak it based on your tastes- or fridge supply. If there is a man in your life who isn’t a big salad lover- give this a try, he might just change his mind!

Ingredients- Salad:

Strips of your favourite cut of steak (or the stirfry strips in the meat department)

Your favourite leaf blend (we prefer spinach)

Strawberries

Blueberries

Feta cheese (or goat)

Candied pecans

Raspberry vinaigrette

Ingredients- Candied Pecans:

2 cups of water

1 cup sugar

2 cups pecans

Ingredients- Raspberry Vinaigrette:

2 tablespoons raspberry jelly

2 tablespoons red wine vinegar

1 teaspoon dijon mustard

4 tablespoons olive oil

Directions- Candied Pecans:

In a pan on medium heat add your sugar, and your water

Gently stir with a spoon to ensure that the sugar is completely dissolved before it comes to a boil

Let it go for approximately 20 minutes on medium heat – you are looking for a nice amber color and slow bubbling. Be very very careful not to burn the mixture

Turn off the heat. In the pan, add your pecans and toss to cover. Bake on a parchment lined baking sheet for 10-15 minutes at 350

Directions- Raspberry Vinaigrette:

Place all ingredients in a bowl and whisk together

Assemble salad ingredients with pecans and top with dressing!

      Ha! He didn’t say that… he just said the best meal ever. I think he was blinded by the steak- I wouldn’t worry too much about it. We all know how he loves his greek salad and rice!
