Grilled Peach and Prosciutto Salad  | 1924 London

Okay you guys- I have struck gold once again. Grilled peaches. Who would have known? CWM absolutely loves peaches so I try to maximize their short season, and this is a perfect way to incorporate them into meals. Grilling them warms and softens them up and brings out this unique deliciously indulgent sweetness that is just the best. Paired with very basic ingredients this made for a seriously delicious salad!

Grilled Peach and Prosciutto Salad  | 1924 London

Ingredients:

4 fresh peaches

8 -10 pieces of prosciutto

fresh mozzarella

arugula and spinach mix

4 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon rice wine vinegar

Directions:

Preheat your bbq or grill pan. Wash, pit, and cut your peaches into roughly 6 pieces. Toss in a bowl with olive oil, and vinegar’s until fully coated, save the bowl and dressing. Place on grill for roughly 10 minutes. So long as they are not burning, the longer you can leave them on the better. While the peaches are grilling up, toss arugula and spinach in leftover dressing. Assemble salad mix, prosciutto, mozzarella and top with peaches. Serve with salmon, chicken or on it’s own as a meal- but don’t forget the white wine to finish it off perfectly!
