Happy Friday ya’ll! I am a big believer in signature drinks and an even bigger believer in an easy one so that as the host you are not spending your whole party mixing up drinks for your guests. Our rule of thumb is that we will pour the first one and after that it is self serve. A big batch cocktail recipe or punch is the perfect solution for the over worked hostess. This wintery apple cider sangria is the perfect Christmas time recipe and does double duty- check back next week for more details on that.
Winter Apple Cider Sangria
1 bottle of inexpensive dry sparkling wine- this is not the place for a bottle of Moet- it’s only a filler
1 cup of cognac of your choice, we had Courvoisier XO but VS is more than ok
1 cup of raw or organic apple cider
1-3 apples, peeled sliced and cut into matchsticks
Fresh cranberries or pom seeds for decoration
I poured the cup of Courvoisier over the apples the day before so that they could absorb the flavour. When you are ready to serve: mix apples, apple cider, and cognac together and store in a pitcher. Pour into glasses, filling about half way and top with sparkling wine and garnish with cranberries or pom seeds.

We had glasses of the Estate Gewürztraminer (Off-dry, Refreshing, spicy grapefruit and lychee nut aromas and flavours) and the Estate Chardonnay Unwooded (Dry, fresh and lemony, gracefully rich and natural buttery licorice flavours). Then for lunch, all four of us ordered the features- broccoli soup and panko crusted wild B.C. salmon fillet with saffron aioli, rice pilaf and fresh vegetables
